Is it possible to add existing PC folders to a library or playlist, but leave out the various numerous self-populating attributes: movies, actor, director, year file type, etc.
    Or hide these attributes?

The only way to prevent videos appearing in the active playlists is to add smart filter rules to the playlist to exclude the file path, so add a rule path 'does not contain' c:\my movies for example.

If the goal is not to have metadata in the media profiles for items in a folder, an option is to multi-select all the items in the folder, delete any meatadata you don't want and then lock the media files with the lock in the top right corner.
