I would love to switch over to Raspberry Pis, running Android. The only problem is that Android for the Pi doesn't support HDR in any form, unless something changed within the last couple of months.

Here's a pretty good thread in the Kodi forums regarding the state of various end point boxes. This is running Kodi on top of the OS. If you prefer Android I suspect you may be running the Mezzmo client ? It does show HDR supported with Raspberry Pi 5s.

The Mezzmo client itself supports it. It's the Android OS itself that seems to have the HDR issue, unless something changed since the Pi 5 came out. I need to look into it.
