You can see the version of FFmpeg by going to the Transcoding Settings dialog. We typically update the version of FFmpeg when we release a new version of Mezzmo. The upcoming Mezzmo v4.1 includes a newer version of FFmpeg.
Each device you own has different video, music and photo format support. Devices support different file containers (e.g. MP4, AVI, MPEG, MPEG-TS, WMV, MKV, etc.), video codecs (H.264, MPEG-4, MPEG-2, etc.) and audio codecs (AC-3, DTS, AAC, MP3, etc.). So there is no one format that you can convert your files to. That's where device profiles are used to tell Mezzmo what formats are compatible with your devices and when transcoding is required.
